WINTER IS COMING…

… Actually, it feels like it’s already here.  Busy times at the House, as we welcome corporate groups and holiday-makers looking to celebrate the Season.  But no matter how big the party, we make sure to always keep some room for those whose travels bring them down the stairs in search of the Oyster.

We’re sad that the Alaskan Red King Crab will not be making an appearance this year – the openings in the Bering Sea are just too small to make it worthwhile for live crab to be shipped.  We are assured that the Golden Kings will be joining us in the spring (typically at the end of February), but in the meantime we’ve got lots of other great seafood coming in to grace the table: Ocean Smelts from NB, nice Snappers (‘Iki Jime’) from New Zealand, smoked Goldeye from Manitoba, beautiful Ahi Tuna from the Pacific, and of course, the finest fresh Oysters.  (If you’re going to eat one oyster a year, this is the time to do it, as the oyster packs on fat to make it through the lean months under the ice, so they’re serving up plump and crisp).  Pair it with a nice dry white (or, what the hell, a full-bodied red – we don’t judge) and you’re starting the night off right.
